Recipe: Weeknight Crab Soup

Weeknight Crab Soup

1 lb. Maryland blue crabmeat, free of shells
3 cups low fat chicken broth
2 5.5 oz. cans spicy V8 juice
1 16 oz. package frozen mixed vegetables
3 tbs. Old Bay seasoning
3 bay leaves
Hot sauce (to taste, optional)

Combine ingredients in a large stockpot. Heat over medium flame, stirring occasionally. Simmer at least 10 minutes. Remove bay leaves and serve.
