My family loved this recipe. I have used it several times, and was popular with my family. The only problem I have with it is that it sometimes is hard to make the breading stick. The chicken has a great flavor and easy to prepare.
WEIGHT WATCHERS MEXICAN CHICKEN
2 1/2 lbs. boneless, skinless chicken breasts
1 cup V8 Juice
1/4 tsp. Tabasco sauce
1 1/2 oz. corn flakes, crushed
2 oz. low fat sharp Cheddar Cheese, shredded
1 tsp. garlic power
1/2 tsp. each of salt, ground black pepper, chili power, cumin, oregano, and paprika
In a shallow pan marinate the chicken pieces in the V8 Juice and Tabasco. Refrigerate and wait at least three hours, or overnight.
WHEN READY TO COOK:
Mix remaining ingredients in a large plastic bag. Line a jelly roll pan with foil and spray with Pam
Drain the chicken and discard the marinade. Dip each piece of chicken in the corn flake mixture and place on the prepared pan.
Bake uncovered in a 375 degree F oven for one hour or until chicken is done.
