Recipe(tried): Weight Watchers Shrimp Soup (serves 2)

I made this a lot in the years I was on W.W.

WEIGHT WATCHERS SHRIMP SOUP

2 teaspoons diet margarine
2 teaspoons flour
3/4 cup water
1 teaspoon chicken bouillon or 1 cube
1 small zucchini, cut into strips 1x1/4-inch
1 oz. green onion, sliced
1 can (8 1/4 oz.) tomatoes, drained
6 oz. shrimp
1/2 cup evaporated skim milk
1/8 teaspoon thyme
Minced fresh parsley for garnish

Melt margarine in top half of double boiler over boiling water. Add flour and stir until a paste is formed.

Stir in water gradually and add bouillon. Cook and stir until thickened.

Add zucchini and green onion. Cover and simmer 5 minutes.

Stir in remaining ingredients except parsley. Heat until hot. Garnish with parsley.

Makes 2 servings.
