CHIQUI'S CAJUN SWEET FRITTES
4 to 6 large sweet potatoes, peeled and cut into large wedges
1/2 cup olive oil
Your favorite Cajun Spice seasoning mix
Place cut-up sweet potatoes in a large bowl and toss well with the olive oil. Season generously with the Cajun seasoning and toss well again.
In a large non-stick skillet over med-high heat, brown potato wedges on all sides in small batches. Place cooked potatoes on a sheet pan and repeat process until all the wedges are cooked. Keep warm in a low temperature oven.
Make plenty because these are addictive!! Great with Turkey, Pork or baked ham!! My family even loves these with steak dinners instead of a baked potato!! It's a nice change from the sugar laden sweet potato casseroles!!!
