Recipe(tried): Whipped Shortbreads

Desserts - Cookies, Brownies, Bars
I'm from Canada and this shortbread is a favorite of mine. It melts in your mouth and one is never enough.

WHIPPED SHORTBREADS

1 cup soft butter (not melted) I let it sit out over night
1/2 cup powdered sugar
1/4 cup cornstarch
1 1/2 cup flour

Preheat oven to 325 degrees F.

Sift dry ingredients over butter. I use my hand mixer on low speed to whip the mixture together until well blended. Then on high speed until mixture is like whipped cream.

This mixture can be dropped by spoon on a cookie sheet or use a piping bag and make fancy cookies. I have a star nozzle for my piping bag and then I bake them with sparkles on them for Christmas.

Bake for 15 minutes. watch carefully.

They can be decorated in many ways for Christmas or Valentines. Great anytime of year just a piece of cherry on top. melt in the mouth cookies.
