Recipe: Scotch Shortbread

Breads - Assorted
: While in Canada a couple of years ago we visited the town of Niagara on the Lakes I think it was called. We went into a bakery there and bought some shortbread that would melt in your mouth. It was sort of puffy as I recall. Can anyone share a recipe for a mouth watering shortbread with me. Would greatly appreciate it.
: Thanks,
: Kaye

Dear Kaye,

This recipe calls for an egg which may make it lighter than other shortbread recipes.

Title: SCOTCH SHORTBREAD
Categories: Cookies
Yield: 1 batch

4 c Flour
1 c Butter
1 c Sugar
1 Egg

Cream butter and sugar, blend flour with them. Add whole egg and mix
well. Knead this on a board until smooth and with the palm of hand at
the edge, press flat with the knuckles or finger tips of other hand.
Do this until it is about 1/2" thick (dough will be too short to use
a rolling pin). Bake in a slow oven until light brown.
