Recipe: Wild and Brown Rice with Grapes

WILD AND BROWN RICE WITH GRAPES

1/4 cup wild rice
2 cups water, divided use
1/2 cup brown rice
2 teaspoons vegetable oil
1/4 cup thinly sliced celery
2 tablespoons chopped onion
1/4 teaspoon fresh sage
1/8 teaspoon salt
1 dash freshly ground black pepper
1 cup halved seedless grapes
1/2 cup chopped tomato
2 tablespoons chopped parsley
1 whole fresh sage leaves for garnish

Soak wild rice in 1 cup water for 1 hour or more. Drain well.

Cook brown rice (without salt or oil) according to package directions.

In a medium saucepan, heat oil over medium heat; cook celery and onion 3-4 minutes or until softened.

Add the sage, season with salt and pepper and mix. Add remaining 1 cup water and drained wild rice; bring to boil. Reduce heat, cover and simmer 45 minutes.

Spoon into mixing bowl; add cooked brown rice and grapes and toss. Garnish with tomato, parsley and sage leaves.
