FLUFFY SPINACH CASSEROLE
3 pkg. (10 oz each) frozen chopped spinach
1 (8 oz) pkg. cream cheese, softened
2 eggs, separated
1 (10.75 oz) can condensed cream of mushroom soup
4 Tbsp. Parmesan cheese
1 (2.8 oz) can French fried onion rings
Cook spinach according to directions on package. Drain. Add beaten egg yolks, cream cheese, mushroom soup and Parmesan cheese.
Beat egg whites until they hold soft peaks. Fold into spinach mixture. Pour into a greased casserole dish and top with onion rings.
Bake at 350 degrees F for 35 to 45 minutes.
Makes 10-12 servings
