Recipe: Au Gratin Potatoes (using Cheddar and Parmesan cheese)

AU GRATIN POTATOES

1/4 cup plus 1 tablespoon margarine, divided use
1/4 cup flour
1/2 teaspoon salt
2 cups milk
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
5 cups potatoes, peeled and sliced
1/4 cup dry bread crumbs
1 tablespoon margarine

Heat oven to 350 degrees F. Grease a 2 quart casserole dish.

In medium saucepan, melt 1/4 cup margarine; stir in flour and salt. Add milk. Cook until mixture boils and thickens, stirring constantly.

Stir in cheeses and potatoes. Pour into prepared casserole dish.

Combine crumbs with the remaining 1 tablespoon margarine; sprinkle over potatoes.

Cover; bake for 1 to 1 1/2 hours or until bubbly.

Makes 6 servings
