Recipe CollectionsBoil the amount of milk you want to have turn into yogurt, stirring slowly. Watch it very carefully. As soon as bubbles begin to break the surface, turn off the heat. Do not let film begin to form on the surface Stir in one or two tablespoons of live culture (yogurt with acidophilous). Cover tightly. Leave it in the oven at warm heat overnight. It should be ready in about 24 hours.
If in the Congo you don't have an oven, maybe you could boil a pot of water, put the yogurt on top of this boiled water and cover it all with a blanket. That may keep it warm enough.
