Hi Betsy;
I made the raspberry yogurt pie, it was deee-licious.
I froze one piece, just to see how it would do. It worked fine and Jim loved it frozen, me, not so much. Too cold.
I also made the filling using pineapple yogurt and jello and one using peach yogurt and jello. I didn't put these two in graham shells. We eat out quite often, but never buy dessert. We have been having a little ramekin of the peach or pineapple when we come home.
Actually I prefer having it without the crust. It is like a light, fruity, airy mousse.
I just mix the yogurt and jello in a medium sized bowl until the jello is dissolved, then fold in the cool whip with a rubber spatula. I put it in a couple of empty cool whip containers in the fridge. It needs to set for a few hours, before eating.
My next flavor to try will be cherry.
Thank you for a great recipe that is so easy and fast.
