Recipe: Zeppole San Guiseppe

ZEPPOLE SAN GUISEPPE

1 1/2 cups flour
1/4 teaspoon baking soda
1 cup water
4 1/2 tablespoons butter
3 large eggs
pinch of salt

Preheat oven to 425 degrees F. Line a cookie sheet with parchment paper.

Sift flour, salt, and baking soda together. Set aside.

In a saucepan, melt butter in heated water. Remove from heat and add flour mixture. Beat with a wooden spoon and return mixture to medium/ high heat. Keep beating until mixture pulls away from the sides of pan.

Remove from heat again and add the eggs one at a time, blending well.

Put mixture in a pastry bag and pipe out 2 inch circular puffs.

Bake at 425 degrees F for about 15-20 minutes or until golden brown.

When cool, fill with fruit, whipped cream or serve plain with powdered sugar.
