Recipe: Zucchini Cilantro Dip (food processor)

ZUCCHINI CILANTRO DIP

2 small zucchini, shredded (about 1 1/2 cups), divided use
1 cup nonfat cottage cheese
2 tbsp chopped cilantro
2 tbsp lemon juice
1/4 tsp pepper
1/4 tsp chopped green onions
1 clove garlic, chopped

Place 3/4 cup of the zucchini and remaining ingredients in food processor. Process until smooth.

Remove and stir in remaining zucchini. Cover and chill 4 hours.

Serve with veggies, crackers or chips.
