CINNAMON PECAN MUFFINS
1/2 cup chopped pecans
1/3 cup firmly packed light brown sugar
1 tsp. ground cinnamon
2 cups biscuit baking mix (like Bisquick)
1/3 cup granulated sugar
1 egg
2/3 cup milk
1/4 cup sour cream
Preheat the oven to 400 degrees F. Coat a 12-cup muffin tin with nonstick cooking spray.
In a large bowl, combine the pecans, brown sugar and cinnamon; mix well. Measure out and reserve 1/3 cup of the mixture.
Add the remaining ingredients to the remaining pecan mixture; stir just until moistened.
Spoon evenly into the muffin cups. Sprinkle with the reserved pecan mixture.
Bake for 15-18 minutes, or until golden and toothpick tests done.
Serve warm, or allow to cool slightly, then remove to a wire rack to cool completely.
