ZUCCHINI PINEAPPLE BREAD
2 cups sugar
1 cup oil
3 eggs
2 teaspoons vanilla
2 cups shredded zucchini (unpeeled)
1 (8 1/2 oz) can crushed pineapple, well drained
3 cups flour
2 teaspoons baking soda
1 teaspoon salt
3/4 teaspoon ground nutmeg
1/4 teaspoon baking powder
1 cup chopped walnuts
Beat sugar, oil, eggs and vanilla until thick. Stir in remaining ingredients; mix well. Pour into 2 greased (9x5-inch) loaf pans.
Bake at 350 degrees F about 1 hour or until wooden pick inserted in loafs comes out clean.
Makes 2 (9x5-inch) loaves
