Recipe: Zucchini Pizza Strips (using fresh basil)

ZUCCHINI PIZZA STRIPS

1 large zucchini
1 medium tomato, coarsely chopped
1 medium carrot, grated
4 fresh basil leaves, cut into thin strips
3/4 cup grated mozzarella cheese

Preheat oven to 400 degrees F.

Cut the zucchini lengthwise into flat strips 1/4-inch thick. Bring 1/2 inch water to a boil in a skillet. Add the zucchini strips, cover and cook for 3 minutes (don't overcook). With a slotted spatula, remove the strips to a baking dish lined with foil.

Sprinkle the zucchini with tomato, carrot, and basil. Top each with some cheese.

Bake 20 minutes or until the cheese has melted. Let the pizzas cool slightly before serving.

Makes 5 servings
