Recipe: Garlic-Chive Mashed Potatoes (using yogurt, Weight Watchers recipe)

GARLIC-CHIVE MASHED POTATOES

4 1/2 cups Yukon Gold or baking potatoes, peeled and cubed
6 large garlic cloves, peeled
2/3 cup 1% milk
1/2 cup plain low-fat yogurt
1/2 teaspoon salt
1/4 cup chopped fresh chives
1 whole chives (optional, for garnish)

Place cubed potatoes and garlic in large saucepan and cover with water; bring to a boil. Reduce heat, simmer 15 minutes or until tender; drain well.

Return potato and garlic to saucepan. Add milk, yogurt and salt; beat at medium speed of an electric mixer until mixture is smooth. Add chopped chives and stir well. Garnish with whole chives, if desired.

Makes 4 servings
