Recipe(tried): Zucchini Relish

I use this recipe in all most all my salads. You put the relish in hot and process. You can use the relish any time. There is no waitng.

Zucchini Relish

10 cupe zucchini [ground - do not peel]
4 cups onions
5 Tbsp salt
Mix well & let stand overnight. Drain & rinse well in cold water.

Add
2 1/2 cups dark vinegar
4 or 5 cups sugar, if you want it real sweet use the 5 cups of sugar
1 tsp nutmeg
1 Turmeric
2 Tbsp. celery seed
1 Tbsp corn starch
1/2 tsp pepper
1 red pepper[ground]
1 green pepper[ground]
1 Tbsp dry musard

Mix all together and in a large pan cook for 30 minutes.
place in sterilized jars and process in boiling water bath 10 minutes.
