ISO: All Almond Biscotti - baked only once

Just returned from New York and had the very best biscotti I've ever had. It was STUFFED with almonds and ?cinnamon?. Anyone have a recipe fitting this overstuffed almond biscotti? Someone said that they are only baked onced but were squirted with water while baking....is that a clue? Thanks.
