ISO: Can anyone tell me how to make great cinnamon buns using whole wheat flour

I am in need of a cinnamon bun recipe which uses whole wheat flour. I live in Holland and have to use all things from scratch. I copied the Cinnabons recipe and I would love to use it but I cant get the instant vanilla pudding here. Any advice on subsitutes for that as well?
