I think they just need one rise, then you punch down, form the buns, and let them rise again right in the pan, before baking.

I have to really think hard, it's been awhile. But I used to refrigerate them for baking the next day. You could also freeze them, as you say; they are so awesome when they are freshly baked, aren't they?
