ISO: canning apple pie filling using tapioca

I have lost my tried and true recipe for canning apple pie filling. My recipe did not use cornstarch, but used tapioca. I remember the ingredients, but not the amounts. I have 80 lbs. of apples to process tomorrow and need it right away. Thanks.
