ISO: Canning Fresh Salsa?

Great information. I am presently working on producing and selling a fresh salsa recipe which is not cooked in a saucepan, so there is no heat element which all the recipes in the canning information listed. Was wondering if anyone knew of or could suggest a good way to maintain freshness of product? Canning a fresh salsa? What if one uses plastic containers in addition to glass canning containers? Thank you for any insight you can share.
