ISO: Chicken and noodles

Does anyone have a good recipe for leftover chicken with noodles. My husband wants it to put over mashed potatoes. I need one that doesn't use canned soup as we are on a cholesterol free diet. I guess I would really like to know what spices would go best to jazz it up.
