ISO: Chicken Gleasons, or as my father's family called it - Chicken Pot Pie

I'm Katie's Mom and we have been making Gleasons in our family for as many generations as my parents could remember. Both my Mother and my Father's sides made Gleasons. My Paternal Grandmother made it with beef and chicken, although I have never tried it with beef myself but would like to. My Father's family called it Chicken Pot Pie

CHICKEN GLEASONS RECIPE:

1 very fat roasting chicken (whole or cut up)
1 large can chicken broth
water (as needed)
2 large sweet onions
1/2 teaspoon summer savory
salt and pepper (to taste)
flour (for the dumplings, as needed)
cranberry sauce (for serving)

Place chicken in a large pot. Add chicken broth and finish covering with water. Add onions, summer savory, and salt and pepper. Boil until chicken is done.

Remove 1 1/2 cups broth and set aside until cooled to room temperature (strain onions and summer savory out of cooling broth). Leave the rest in pot on stove on simmer.

Once the 1 1/2 cups broth is cool, add flour to it until dough is quite dry. Split dough into reasonable size and roll out on floured board (knead in more flour). Roll out dough quite thin, cut into squares, approx. 1 1/2 inches.

Remove chicken from pot and place in oven to keep warm.

Bring broth on stove to a rolling boil and drop squares into broth, being careful to stir slowly very often to make sure nothing is sticking to the bottom. Repeat rolling dough and placing squares into broth until you are out of flour dumpling mixture or pot is full. Cook slowly for approx. 15 to 20 more minutes or until dumplings are cooked all the way through. If it gets too thick add water before serving, should be the consistency slightly thicker than stew.

Serve with chicken and cranberry sauce.

I have started a tradition of making this dish every Christmas Eve and now my oldest daughter is doing the same, even though her husband does not like the dish, get with it Kirk (he's not French Canadian) Every time my family gets together, either Mom's side, Dad's side or my brother come into town it is an excuse to make Gleasons.

What is added to the broth of the beef version?
