ISO: Chocolate cookie. Rum cake

Hi,

I am looking for two recipes.

1. Rum Cake from scratch (without coconut).

2. A chocolate cookie filled with raspberry jam. Not a thump-print cookie. Lookes like a raviola. I believe the jam must be put in before the cookie is baked.
