ISO: Cilantro Recipes

I discovered Cilantro when I was in Santo Domingo on vacation. I couldn't get any of the locals to tell me what spice it was and recently identified it. The fish I had there (red snapper) was cooked with it and it was wonderful. Do you have any recipes that call for cilantro. I'd particularly be interested in any soups. The taste is wonderful and very refreshing. But ... I agree with others, I guess you have to acquire a taste for it.
