ISO: coconut pie

I am looking for a recipe for coconut (cream?) pie. My grandmother used to make it. I remember she grated fresh coconut and toasted it in the oven. She died last year at 99 and we don't have the recipe. It was always just a pinch of this and a pinch of that. It was the best! Many thanks for the kind assistance.
