ISO: Coco's Bakery Chicken Tortilla Soup

Hi, I'm hoping someone can figure out how to make the Chicken Tortilla Soup that they serve at Coco's Bakery. I asked for the recipe and they said they get it pre-made from headquarters. On their website it says: "Enjoy a crock of Chicken Tortilla Soup - tender white-meat chicken, and vegetables like zucchini and carrots all topped with strips of crispy corn tortillas and melted Cheddar cheese." The tortillas are the red ones cut in strips and there is also onion, celery, tomatoes and cilantro. The soup is probably based on chicken broth (it is not a creamy soup). Thanks for your help! I love this recipe and am afraid that they'll change or discontinue it someday.
