ISO: Cooking a chuck roast in a roaster oven vs slow cooker

I have 5.75 lbs of BEEF CHUCK ROAST to cook for tonights dinner. I had hoped to use the (4.5qt) slow cooker, but it wont hold all the meat & veggies I want to put in it, so now I need to use my (18qt) roaster oven.

1. Do I need to use a bag or foil wrap to keep in the moisture/self steam or should the lid take care of that? (I cook my turkey in the roaster all the time, so I think I know the answer to that, but please confirm anyway.)

2. Do I add the potatoes, carrots & onions at the beginning of roasting, or at another point in time?

3.Do I pan sear the meat first?

4.How much cook time & at what temp to cook a full oven at? Help!
