Recipe: Pot Roast with Vegetables in a Roaster Oven (using chuck roast)

6 to 8 lbs. beef chuck roast
2 cups baby carrots
8 medium potatoes, peeled and quartered
2 onions, quartered
2 cups beef broth (or beef bouillon)
1 tbsp salt (or to taste)
1 tsp. ground black pepper
Preheat roaster oven to 300 degrees F.
Place roast in bottom of Cooking Pan. Place vegetables around sides of roast. Add salt, pepper and broth.
Cover; cook at 300 degrees F 3 to 4 hours or until tender.

Hi Anna,
You can sear the meat first if you'd like but it isn't necessary. If you do, it will add some flavor - I would deglaze the pan with the beef broth and add that to the roaster. Personally, 1 tablespoon salt seems like too much to me, especially if the broth or bouillon you use has salt. It's a good idea not to open the lid too often, each time the moisture escapes and it can also add to the cooking time.
