ISO: Corned Beef and Cabbage in roaster oven for 100

Our activities committee is holding a St.Paddy's Day Party for approx. 100 people on this Tues.17th. We are providing the corned beef & cabbage, red potatoes, carrots, etc. Planning on using our large electric roasters (6) to cook the corned beef in & not sure for that large amount of people if cabbage should be cooked 1st or with it & what other seasoning should go in. It's a lot easier preparing this meal for 5 or 6 family members.
