ISO: Cranberry Muffins - no lard, shortening.

Further to my request for a recipe for plain cranberry muffins. Does anyone have a recipe that does not contain lard or shortening? Lard contains animal fat and shortening contains hydrogenated oil ... both of which I do not use.

So, if anyone has a recipe for plain cranberry muffins with no shortening or lard and which I can substitute the sugar for something else ... pleeeezzze let me know. Thanks a bunch.
