Cranberry Orange Muffins
Serves:12
1-1/4 cups flour
1 Tbsp. CALUMET Baking Powder
1/4 tsp. salt
2 cups POST CRANBERRY ALMOND CRUNCH Cereal*
1 cup skim milk
1 egg, slightly beaten
1/2 cup applesauce
1/3 cup firmly packed brown sugar
2 Tbsp. margarine, melted
1 tsp. grated orange peel
* Or prepare as directed, substituting 2 cups POST BANANA NUT CRUNCH Cereal or POST GREAT GRAINS Cereal for POST CRANBERRY ALMOND CRUNCH Cereal.
MIX flour, baking powder and salt in large bowl. Mix cereal and milk in another bowl; let stand 3 minutes. Stir in egg, applesauce, sugar, margarine and orange peel. Add to flour mixture; stir just until moistened. (Batter will be lumpy.)
SPOON batter into muffin pan which has been sprayed with no stick cooking spray, filling each cup 2/3 full.
BAKE at 400 F for 20 minutes or until golden brown. Serve warm.
