ISO: Cuco's Chimichanga Sauce/Gravy

I love Cuco's chimichangas even though I haven't had one in years. I was contemplating making one myself when I thought about how they always had theirs immersed in a sauce or gravy. I usually ordered the beef chimichanga and I remember it had a brownish type gravy that wasn't spicy (hot). I've spent the better part of an hour looking on the internet for something like it but haven't found it. I have no clue what a "mole sauce" is, which happens to be one of the recipes I stumbled on. Can you help me?
