ISO: Cutting raw potatoes

Curious if anyone else puts cut-up potatoes in a bowl of water before using them. I do it out of habit because my mom always did -- she said that it helps "get the starch out." She left them sit in water before she made french fries and other foods.

I like it just for the convenience -- I cooked a beef roast yesterday and kept the potatoes covered in a bowl of water before adding them.

Any thoughts? Thanks.
