ISO: Freezing (eggplant parmagiana) question!

Hi! I'm a busy college student and just moved into my first apartment. I love to cook but don't always have the time. My favorite meal in the world is my mom's eggplant parmagiana. She gave me the recipe and I was wondering if I could make it and freeze individual portions to reheat at a later time for myself? How would I go about doing this?
