Recipe: Freezing Eggplant Parmigiana

Yes, freeze your eggplant parmigiana. It may be a little different in texture after frozen, but still very good. If you can get some small plastic freezer containers, like Rubbermaid, or Tupperware, etc. they will work fine. There are also so inexpensive ones in the grocery stores now. I often place a piece of plastic wrap on top of the food to keep out air inside the containers and prevent freezer burn.
