ISO: Houlihan's Smashed Potatoes

I'm originally from St. Louis, MO which has a chain of resturants called Houlihan's. They make the best smashed potatoes I've ever had, but they refuse to part with the recipie. If anyone knows their secret, I'll be forever greatful. Thanks.
