APRICOT PORK CHOPS

6 reasonably thick pork chops
Flour, salt and pepper
1 medium onion, finely chopped
1 medium can apricot halves
2 tablespoons soy sauce
a green pepper, thinly sliced, if you like it

lnto paper bag put a little flour, salt, pepper, and then chops. Shake them firmly. Brown them in the fat you trimmed off, then add the apricots, onions, and soy sauce.

Simmer it half an hour covered, STOP HERE, and simmer half an hour uncovered. If you aim to add the green pepper, do it fifteen minutes before the chops are done.

Makes 6 servings
