ISO: How to ensue the mooncake pastry maintain the design of the mould after baking.
Misc.Hi,
I am trying to make traditional lian yong mooncakes. I am having trouble ensuring that the design of the mould remain well defined after baking.
My problem is that the design of the mold becomes less defined during baking. I am using temp 180 degree C for 10 min follow by 5min cooling including brushing with egg and then another 10min as per recipe easily found from the internet.
Can you anybody advice how to prevent it?
Thomass
