Recipe: Broccoli Tomato Tart (using buttermilk and Bisquick, blender)

BROCCOLI TOMATO TART

1 (10 ounce) package frozen chopped broccoli*
1 cup buttermilk
1 egg
1 teaspoon vegetable oil
2/3 cup baking mix (Bisquick)
4 slices tomato
1/3 cup grated Parmesan cheese
Paprika to taste

Place broccoli in a 9-inch pie plate sprayed with nonstick cooking spray. Microwave on high for 7 minutes.

Combine buttermilk, egg, oil and baking mix in a blender container. Process until smooth. Pour over broccoli. Top with tomato slices. Sprinkle with cheese and paprika.

Bake at 400 degrees for 25 minutes. Let stand for 5 minutes before serving.

*May substitute fresh broccoli for frozen broccoli.

Makes 6 servings as a side dish or 4 servings as an entree
