ISO: How to Fix Pork for Bean and Pork Burritos??

I once ate the very best burritos that had "chunks" of Pork in them..My question is: what cut of pork is needed for this and how do you cook the pork? Is it fried,boiled,baked or what?? The chunks were more cubes if I remember rght.Thanks for helping...
