Recipe(tried): Meat for Pork Carnitas

This is how I do the pork for our pork carnitas. I don't know if it is what you want but it is gooood!
I buy the cheapest pork roast I can. Sometimes tenderloins are on sale and I use them but the "butt" is tastier with the fat in it!
I put in my crock pot for the day with lemon juice poured over it, oh maybe 1/2 cup. when it is time to serve I use a slotted spoon to remove pork, it will fall apart in pieces
I transfer what we will need for this nights dinner into a fry pan and add more lemon and fry it. The lemon cuts the fat and give this wonderful taste!
now for the rest of the carnitas:
I set all of this out for folks to pick and choose from to make what some calla burrito but it really is not a burrito:
Pork
Avacado
sour cream
cheese, grated
cilantro (mexican parsley)
tomato
Lime wedges
hot sauce
and sometimes refried beans
By the way I am no near mexican, but we lived in SD for a while and loved this dish at the old town mexican cafe!
