ISO: Italian - Caplettes

My Nonie and I have been searching her entire house for a recipe for these tasty filled noodles. The filling is called "pist" and contains 3 meats (beef, veal, and we think pork) as well as hard reggiano cheese. You make dough for noodles and roll flat - then cut into tiny squares. A small dollop of pist is put in the middle and you fold them diagonally like little hats or "capellettos" (spelling?). You then let them dry and cook in homemade chicken broth topped with grated hard reggiano cheese.

If anyone has ever heard of this Northern Italian soup and has an exact recipe, we would greatly appreciate a response (and would gladly send you some!)

Thank you!!

Sincerely,

Jill Kula
