ISO: Caplettes (Italian filled noodles)

We really don't have a recipe- it's a pinch of this and a little of that but this is the closest we have come to writing the "recipe down. My grandparents came from Italy and we have been making this for Christmas since I was born.

Grind together- 1/2 to 3/4 veal or beef (preferably veal)
piece of stewing chicken
1/2 onion

Season meat while cooking- Cook together in a little crisco and a little butter. Not thoroughly (leave cool)

Mix 2 to 3 cups of bread crumbs, 2 cups Parmesan cheese together, refrigerate overnight for flavors to mingle.

Make 7 cups noodle dough:
7 cups flour, dash of salt and 7 or 8 eggs (jumbo eggs work best) knead dough until smooth until smooth and let rest about 1/2 hr.

Roll out and make caplettes.

Taste-you might want to add more cheese- we always do.

Sorry not so official- but that's what my Nana left us before she passed away.....
