ISO: Leftover pork roast recipe(s)

I'd like to use the leftover pork roast in our fridge. Perhaps there is as
much as a pound there. Any ideas for a stir fry or anything else would be
appreciated. I had cooked the pork with shallots, fresh sage and coarse
mustard but I think I can use it in almost any sort of a meal. I did a search
for leftover pork without much luck. Thanks in advance.
