ISO: My Grand-Daughter has a plan.....PLEASE HELP

My nine year old grand-daughter wants to make crabapple jelly, or something "cool" with crabapples. We discovered a hidden crabapple tree near my apartment building, and got permission to pick a couple quarts. She just loved the little red apples, and was the livliest I have seen her in ages. She has parents who have divorced and are at war. Things are very hard for her right now. She is a sad little girl. Want to find something fairly simple and cool to make with the crabapples, where I don't have to hang dripping jelly bags. I am in an appartment. Any ideas would be most gratefully received. Thank you.
