ISO: Need easy mexican dishes kids will love!

Our two grandkids (aged 6 and 2) just moved in with us! As big a blessing as it is, it's not without challenges, especially since my husband and I work full-time. I've discovered they like Mexican spices and am looking for some quick and easy recipes that will become family staples. Can you help? And if you have any other recipe that kids just love, please share that as well - it doesn't have to be Mexican. Thanks in advance!
