CAULIFLOWER WITH CRUMB TOPPING
1 cauliflower, broken into florets with 1/2-inch stems
1/4 cup butter or margarine
1/4 cup fine dried bread crumbs
salt and pepper to taste
Place cauliflower florets on a steamer rack above gently boiling water, cover, and steam until tender, about 10 minutes.
Meanwhile, in a small saucepan over high heat, melt butter. Using a spoon stir until bubbly and just beginning to brown, 1 to 2 minutes. Remove from heat. Add bread crumbs and mix until butter is absorbed, about 30 seconds.
Transfer cauliflower to a warmed platter. Pour crumb mixture evenly over top. Season with salt and pepper and serve immediately.
VARIATION:
Mix 1 tablespoon grated Parmesan cheese with crumbs before adding to butter.
Makes 4 servings
